
Unless you can tackle your whole Thanksgiving feast in one sitting, there’s a possibility that there’s a lot of turkey, beef, stuffing, vegetables and cranberry sauce sitting in your kitchen this morning.
Some people do a second or even third day of the same dinner, many just put the waste in the garbage, while others donate to a food bank or charity.
If you’re not doing any of those three options with your leftovers from yesterday, here’s a different yet delicious menu that you probably would never consider, but you just might now.
Comfort food is key here.
Starter: Leftover Thanksgiving Nachos
Start day two with nachos and whatever you have left in your fridge!
1 cup sour cream, 1 tablespoon minced chipotle chili, 10 cups tortilla chips, 2 cups shredded leftover turkey meat, 3 cups shredded cheddar, 2 cups shredded Monterey Jack cheese, 2 cups thinly sliced leftover cooked Brussels sprouts, 1.5 cups leftover cubed roasted butternut squash, 1 cup packaged french-fried onions, 1 cup lightly packed cilantro leaves or parsley leaves, 1/2 cup sliced black olives, 1/4 cup chopped pickled jalapenos.
Main: Leftover Mashed Potato Pizza
Okay, hear me out before you scroll down in disgust. This will blow your mind!
5 ounces of finely diced slab bacon, 1.5 pounds of prepared pizza dough, all-purpose flour, olive oil, salt, pepper, 3 cups of leftover mashed potatoes, 1.5 cups of shredded mozzarella, thinly sliced leek, 1 glove garlic, half a cup of grated Parmesan cheese, 12 fresh basil leaves, crushed red pepper flakes.
Dessert: Cranberry-Carrot Muffins

2 cups all-purpose flour, 2 teaspoons baking powder, ½ teaspoon salt, ½ teaspoon ground cinnamon, ¼ teaspoon ground nutmeg, ¼ teaspoon ground ginger, ½ cup unsalted butter, ¾ cup sugar, 2 large eggs, 1 cup pureed cooked carrots, zest of one orange, ½ cup leftover cranberry relish, 2 tablespoons granulated sugar for sprinkling.
